I have made it a point this summer to support small farmers and reap the benefits of eating locally grown produce. Each year our farmers market gets a little larger, providing more and more variety.
Every Saturday we head there to buy fresh veggies for the week ahead. This past weekend we decided we wanted to load up and head across the border into Durant, Oklahoma for their farmers market to see what we could find. However, on our drive there we drove past a family owned produce stand and stopped. They had the largest selection of perfectly ripened summer peaches that couldn’t be ignored due to their overwhelming sweet aroma.
I quickly decided on the classic peach cobbler because it screams summer. It’s a southern summertime favorite around here and can be enjoyed on its own or with a scoop of homemade vanilla ice cream on top!
What is cobbler?
There is an ongoing discussion, or debate rather, about what a cobbler even is. I’d love to hear in the comments what a cobbler looks like to you in addition to your favorite flavor.
From what I have gathered a cobbler can be one of several things: a fruit filling covered with a batter or biscuit topping or a fruit filling baked similarly to a pie with a crust on top and bottom.
Why I love this peach cobbler recipe
As a little girl I would always pick through my cobbler and only eat the crust. It was so wasteful but all I wanted was the crust covered in the fruit flavoring – not the fruit itself. Do you pick through your cobbler to enjoy only the crust?
I don’t have to worry about that with this recipe since I intentionally tailored it to my love for crust. No more picking around the fruit so I can enjoy every bite.
Tips for making cobbler
If you are someone that likes more fruit filling than crust, I would suggest doubling the fruit mixture described below in the recipe. It will taste amazing either way!
Adapt this recipe to suit the fruit that’s in season. You can make it with apples, blackberries or pumpkin depending on what time of year it is. Cobblers are so versatile.
Remember not to stir the batter into the pre-baked peach mixture. You want the batter to kind of push the butter and peach juices to the edges of the skillet to give you that yummy caramelized flavor.

Ingredients
- 1 cup flour
- ½ tsp salt
- 1 cup white sugar
- 1 tbsp baking powder
- stick butter, browned in skillet
- 1 cup whole milk
- 1 tsp vanilla
- ¼ cup brown sugar packed
- ½ tbsp cinnamon
- 3 tbsp cold butter
- 4 peaches peeled and diced to desired size
- ¼ cup white sugar for topping
How to make Peach Cobbler
This recipe is so simple. If you are looking for a dessert that knocks your socks off without using up too much of your time then this one is for you.
Peach mixture
- Start by preheating your oven to 350 degrees Fahrenheit.

- While the oven is preheating, peel and dice the peaches and place them in the skillet you are baking the cobbler in.

- Add brown sugar and cinnamon to the diced peaches in the skillet. Stir the mixture around well and then smooth peaches out into one layer. This ensures they all soften at the same rate in the oven.

- Dot the peaches with the 3 tablespoons of cold butter and bake in oven for 20 minutes.
Mixing up the batter
- Next, brown 1 stick of butter on stovetop in small saucepan or skillet. Babysit the melting butter and pull it off the burner as it reaches a golden color. It will continue to cook as it sits in the saucepan even after you take it off the burner – so don’t leave it on too long.

- In a bowl, combine dry ingredients: flour, white sugar, baking powder, salt.

- Add milk, vanilla and browned butter to the dry ingredients and mix well with whisk until smooth. This batter is going to look runny but trust that it’s supposed to look like that.

- Once the peaches are softened from baking, remove the skillet from the oven.
Baking the cobbler


- Pour the batter over the baked peaches but do NOT stir the mixture. You will notice butter and peach juice forming on the edges of the skillet. This is a good thing and you don’t want to disturb it.

- Sprinkle ¼ cup white sugar on top of the unbaked cobbler. Make sure to sprinkle all over and don’t miss the edges – sugar baked with butter and peach flavor on the sides of the skillet caramelizes and is so delicious!

- Bake in oven for 1 hour or until cooked through.
Time to serve!

- Your cobbler is near done when the edges start to pull away from the sides of the skillet and form a crust.
- Serve on its own or with a scoop of your favorite homemade ice cream.
